To grind mining people usually ask for an insanely high ql pickaxe with wind of ages spell. This isnt the way to go. You want a relitivly low ql pick with as much Circle of cunning on it as possible, this will give alot of skill if you mine rockshards with it as it highers the difficulty and the mine time, its the mine time that improves the skill gain in mining, longer mine time = more skill.

To grind carpentry the best way is building houses or grinding sub skills like carpentry, bowyery and fletchery. Don't use WoA on your mallet when you're building, it gives less skill.
