Animals you can ride on are referred to as mounts. They can spawn all over the map from lairs or being random spawns.

Riding
To start riding an animal it either needs to be tamed, lead with a rope, dominated or rebirthed. Then simply right-click the animal and select ride. To unmount click anywhere and select disembark. You also need to have enough body control to ride on creatures (see below).
Mounts are turned with the 'a' and 'd' keys (unless you have remapped them). The mount can turn sharply when not moving forward or backward and will turn with a larger radius when moving forward or backward.
Not all animals can be mounted, may it due to their physical appearance or age (too young or too old). In that case you will get the message that the animal is too weak.
Speed
The speed at which mounts are going varies greatly. Some may only go at a few km/h without any accessories, bred horses with high QL accessories at about 34 km/h. Paved roads do not affect the speed.
As of the Feb. 15, 2012 update, all mounts move 1/3 as fast when moving backwards.
Accessories
You can equip certain animals with accessories such as horse shoes, bridle or a saddle to make the animal go faster. To equip an animal with either of these, it needs to be tamed. Right-click the animal, select Look > Equipment and drag the items onto the proper body parts.
